Æbleskiver

Whisk the flour, salt, sugar, baking soda, and cardamom together in a large bowl. ▢ Separate the eggs and add the egg yolks to the flour mixture. Pour in the buttermilk (or cultured milk) and whisk the batter together until smooth. Cover and refrigerate for about 30 minutes. ▢ Use a hand (or stand) mixer to beat the egg whites until stiff. Carefully fold into the æbleskiver batter. ▢ Heat the pan on medium heat. Once hot, brush the pan with butter and fill each æbleskive hole almost full with the batter. ▢ Once the edges become firm use a knitting needle or wooden skewer to turn the æbleskiver about 1/4. Continue turning until you get round pancake spheres. They should be golden brown. ▢ Remove the æbleskiver from the pan and serve with powdered sugar and jam.

Apple & Blackberry Crumble

Heat oven to 190C/170C fan/gas 5. Tip the flour and sugar into a large bowl. Add the butter, then rub into the flour using your fingertips to make a light breadcrumb texture. Do not overwork it or the crumble will become heavy. Sprinkle the mixture evenly over a baking sheet and bake for 15 mins or until lightly coloured. Meanwhile, for the compote, peel, core and cut the apples into 2cm dice. Put the butter and sugar in a medium saucepan and melt together over a medium heat. Cook for 3 mins until the mixture turns to a light caramel. Stir in the apples and cook for 3 mins. Add the blackberries and cinnamon, and cook for 3 mins more. Cover, remove from the heat, then leave for 2-3 mins to continue cooking in the warmth of the pan. To serve, spoon the warm fruit into an ovenproof gratin dish, top with the crumble mix, then reheat in the oven for 5-10 mins. Serve with vanilla ice cream.

Apple cake

Preheat the oven to 180°C. (350˚F) Grease a cake pan and line it with baking paper. In a large bowl, break the four eggs with the sugar and beat until they have tripled in volume and become fluffy. Sift the self-rising baking flour and add it to your egg mixture. Fold this over, preserving as much air as possible. Add the melted (and slightly cooled) butter and mix until combined. Add cinnamon, pinch of salt and vanilla extract. Add the diced apple to the batter and gently fold them into the batter so that the apple pieces are evenly distributed. You can roll the apple pieces through some more cinnamon. Pour the batter into the prepared cake pan and smooth the top with a spatula. Place the apple slices on top of the batter and press lightly. Sprinkle optionally with some almond shavings. Bake the apple cake in the preheated oven for about 45-50 minutes, or until a wooden skewer comes out clean when inserted into the center of the cake. Remove the cake from the oven and let it cool in the mold for a few minutes. Then carefully remove the cake from the mold and let cool completely on a wire rack. Sprinkle the cooled apple cake with powdered sugar

Apple Frangipan Tart

Preheat the oven to 200C/180C Fan/Gas 6. Put the biscuits in a large re-sealable freezer bag and bash with a rolling pin into fine crumbs. Melt the butter in a small pan, then add the biscuit crumbs and stir until coated with butter. Tip into the tart tin and, using the back of a spoon, press over the base and sides of the tin to give an even layer. Chill in the fridge while you make the filling. Cream together the butter and sugar until light and fluffy. You can do this in a food processor if you have one. Process for 2-3 minutes. Mix in the eggs, then add the ground almonds and almond extract and blend until well combined. Peel the apples, and cut thin slices of apple. Do this at the last minute to prevent the apple going brown. Arrange the slices over the biscuit base. Spread the frangipane filling evenly on top. Level the surface and sprinkle with the flaked almonds. Bake for 20-25 minutes until golden-brown and set. Remove from the oven and leave to cool for 15 minutes. Remove the sides of the tin. An easy way to do this is to stand the tin on a can of beans and push down gently on the edges of the tin. Transfer the tart, with the tin base attached, to a serving plate. Serve warm with cream, crème fraiche or ice cream.

Need Lollipop sticks Instructions for crust Combine the flour, sugar, and salt to a food processor bowl. Mix using the pulse setting. Add butter and shortening and pulse about 10 -12 times until the texture is changed to small pebbles. Add ¾ of the ice water and pulse a few more times until the dough takes the shape of a ball. Add more water as needed. Don't overmix. Don't worry if the dough isn't completely blended. You will use your rolling pin to finish creating the crust. Place dough ball onto the counter and flatten into a flat disc. Wrap it in plastic wrap and refrigerate for at least an hour or overnight. Instructions for pie filling Heat butter over medium heat, until just golden brown Add brown sugar, spices, salt and lemon juice. Stir to combine ingredients Add diced apples and stir. Allow apples to cook for about 5-7 minutes, over medium heat Remove from heat and let the apple mixture cool. You can place apples in the refrigerator to speed up the process. Mix egg and water for an egg wash. Roll out pie dough to 1/8 inch thickness. Cut out rounds of 2 ½ to 3 inches and place them on parchment paper. You will need to roll out the extra dough left over scraps from cutting. In half of the rounds, cut out shapes or holes for ventilation purposes On the other half of the rounds, gently press one lollipop stick about halfway up each round. Place one tablespoon of apple mixture in the center of each round. Place each round on top of apples seal the edges. Brush each pie pop with egg wash and sprinkle sugar on top. Bake 15-20 minutes or until golden brown. Enjoy!

Take your puff pastry from the freezer and defrost. Sprinkle some flour on the kitchen counter. Stack the sheets of puff pastry on top of each other and roll them out with a rolling pin. You want those five sheets to end up being as thin as one sheet. Using a round or oval form press into the puff pastry and try to be as economical doing that as possible. You want to have as many cookies as you can. Mix the vanilla sugar with the cinnamon, cardemom and limezest in a little bowl Remove the flour from the counter and sprinkle with a bit of the sugar mix. Brush your puff pastry with a little bit of eggwash and than dip into the sugar mix and roll them softly to press the sugar in. Put your sugary puff pastry on a baking sheet (greased or with baking paper) and leave the dough to rest for about 20 to 25 minutes. this will make the cookies even crisper. 1 Prepare the Figs Cut off the hard bits of stalk and then cut the figs in half length ways. 2 Place the figs in a small frying pan / saute pan with the cut side face up and add the water around them. 3 Cooking Leave the figs on a medium heat to cook through, once they become soft remove them from the pan and place onto a serving dish. This will take around 10 - 15 minutes. 4 Prepare the Syrup In the pan there will be a red water juice left from the figs. Add the sugar while remaining on a medium heat. Stir continuously for a couple of minutes until the juice has turned to a thick syrup. Remove from the heat. 5 Serving Push one half of walnut into every fig and then drizzle the syrup over the top. 6 Serve warm or cooled.

Grind almonds in an almond grinder or food processor. ▢ Mix almonds and powdered sugar together in a large mixing bowl. Add three of the egg whites and knead the dough together with your hands until it comes together in a ball. Wrap in cling film and leave in the fridge for at least an hour, preferably until the next day. ▢ Grease the kransekake forms thoroughly and coat with semolina, flour, or bread crumbs. ▢ Preheat oven to 210°C (410°F) top and bottom heat. Divide the dough into six sections. ▢ Slowly add the remaining egg white to the dough and knead it until you can roll it into long sausages about as thick as your index finger. Fill the forms with the dough sausages, pinching the ends together to make rings. ▢ Set the forms on a baking sheet and back in the middle of the oven for about 10 – 12 minutes, until the tops are golden brown.

Baghlaw-e-Khanagi

Place flour in a bowl, and create a hole in the middle of the flour. Whisk eggs, and then pour whisked eggs into the well. Add milk, and combine. Then, stir in the ground walnuts, baking powder and cardamom, and add to the mixture. Fold ingredients into the mixture until it forms an elastic dough consistency. Take dough and with a rolling pin, roll out into a thin rectangle on a clean surface. Then, from the longest side of the rectangle, fold the dough into 3cm-wide lines, until the dough is fully rolled in a long line. Cut folded dough horizontally into 3cm pieces Heat a deep pan of the vegetable oil, and wait till it reaches frying temperature. Whilst you are waiting. Fill a deep pan with 1 litre of water, and bring to the boil. Then, pour in the sugar, and stir gently until it becomes thick and syrup-like. Turn down the heat and leave to simmer. Carefully lower each piece of dough into the frying oil. Fry until golden brown. When golden brown, take the Baghlaw pieces out of the oil, and place them into the sugar syrup to coat. Remove from the syrup and whilst still warm, sprinkle with ground walnuts, so they stick to the Baghlaw. Leave to cool. Then, enjoy with your friends and family!

To make the pastry, measure the flour into a bowl and rub in the butter with your fingertips until the mixture resembles fine breadcrumbs. Add the water, mixing to form a soft dough. Roll out the dough on a lightly floured work surface and use to line a 20cm/8in flan tin. Leave in the fridge to chill for 30 minutes. Preheat the oven to 200C/400F/Gas 6 (180C fan). Line the pastry case with foil and fill with baking beans. Bake blind for about 15 minutes, then remove the beans and foil and cook for a further five minutes to dry out the base. For the filing, spread the base of the flan generously with raspberry jam. Melt the butter in a pan, take off the heat and then stir in the sugar. Add ground almonds, egg and almond extract. Pour into the flan tin and sprinkle over the flaked almonds. Bake for about 35 minutes. If the almonds seem to be browning too quickly, cover the tart loosely with foil to prevent them burning.

Baklava with spiced nuts, ricotta & chocolate

step 1 First, make the syrup. Tip the sugar into a large saucepan with 650ml water. Stir over a low heat until the sugar has dissolved, then turn up the heat and bring to the boil. Reduce the heat to a simmer and cook for 15 mins, then squeeze in a few drops of lemon juice and simmer for a further 5 mins. Remove from the heat and leave to cool. Meanwhile, for assembling the baklava later, melt the butter in a small pan over a low heat for 5 mins, skimming and discarding any froth that rises to the surface. step 2 For the filling, crush all of the nuts in a pestle and mortar, or blitz in a food processor – you want a mixture of finely ground nuts with a few chunky pieces. Tip into a bowl, stir through the spices and set aside. step 3 In a separate bowl, mix the ricotta with the lemon and orange zests and vanilla. Heat the oven to 180C/160C fan/gas 4. Brush the bottom of a large baking tray (about 35 x 47cm) with some of the melted butter. Working with one sheet of filo at a time (covering the rest with a damp tea towel to prevent it drying out), lay the sheet out on a board so one of the short ends is facing you. Sprinkle 30g of the nut mixture evenly over the whole sheet, then spoon 1 tbsp of the ricotta mixture across the end closest to you. Fold this end over to enclose the filling, then lay a long, thin skewer next to the folded edge and roll the pastry around it to create a long roll. When it’s fully rolled up, it should be roughly the thickness of a chipolata sausage. While holding one end of the rolling pin or skewer, gently scrunch the filo roll like an accordion and carefully push it off the skewer and onto the prepared tray. Repeat with the rest of the filo and fillings – you should get about 12 rolls. Cut each roll into four to make 48 large baklava, or eight to make 96 mini. step 4 Brush with the remaining melted butter. Bake for 20-25 mins until evenly golden, turning the tray around halfway through. While still hot, immediately pour over 5-6 ladlefuls of the syrup. You should hear the syrup sizzle as it hits the hot baklava. Set aside to cool and absorb. step 5 Melt the dark chocolate in a heatproof bowl set over a pan of simmering water, ensuring the bowl doesn’t touch the water, or in the microwave in short bursts. Drizzle this over the cooled baklava and sprinkle with the ground pistachios.
